At roughly 1,800 square feet, the Huntsville location is something of a prototype, a model Barracuda can carry forward as the concept grows. Inside, the building is organized around a single expo line kitchen, with a center hall layout that lets staff work efficiently from either side. A scullery and walk in cooler support the kitchen, along with a full set of restrooms. Careful attention went into the pickup window, where the flow of the queue shapes the whole front of house experience. A gable roof, familiar from Barracuda's other locations, covers the kitchen below. There is no interior dining by design. Guests eat outside, in a garden planted with cacti and palm trees, under a canopy designed to be simple enough to replicate at future locations.

What sets this project apart is its site. Located within a 100 year flood plain, the building required a four foot elevation above the typical Barracuda prototype, a condition that shaped the design from the ground up. Working closely with the City of Huntsville, the team developed a floodproofing approach that met local requirements without compromising the character of the design. Additional challenges, from ADA compliance to POS placement for proper queuing to grounding the building within its streetscape, were worked through with the same care given to every detail of the project.

Overview

BARRACUDA TACO STAND // HUNTSVILLE, ALABAMA

This is CICADA's fourth project for Barracuda. After two thriving restaurants in New Orleans, uptown and in Algiers, and a location in Bay St. Louis, the concept has now put down roots in Huntsville.

Barracuda's mission is simple: a neighborhood taco stand and margarita garden built for outdoor dining and takeout. The design follows that same spirit, approachable at first glance, but intentional in every decision behind it.
